Quick Chicken Bake

Rosemary loved a good casserole, but sometimes didn’t get a chance to plan ahead and use her beloved crock pot. When she needed a tasty evening meal in a hurry she would throw this together and serve it with buttery mashed potatoes and green vegetables.

Ingredients

  • 1 x kilo of chicken breasts (or the equivalent of chicken tenderloins)
  • 1 cup of cup of sherry
  • Half a cup of liquid honey
  • A teaspoon of cooking or olive oil
  • Sprinkle of allspice (optional)

Method

  • Lightly fry the chicken in oil until golden brown, skin on or off, depending on your preference, then place in a baking dish
  • Mix the sherry and honey together and warm for a few seconds in the microwave until its at a pouring consistency
  • Drizzle over browned chicken
  • Cover with alfoil or a lid for half the cooking time
  • Remove cover and allow it to crisp a little on top

Preparation Time: 10 mins

Cooking Time: 30-35 mins
