Rosemary loved a good casserole, but sometimes didn’t get a chance to plan ahead and use her beloved crock pot. When she needed a tasty evening meal in a hurry she would throw this together and serve it with buttery mashed potatoes and green vegetables.

Ingredients
- 1 x kilo of chicken breasts (or the equivalent of chicken tenderloins)
- 1 cup of cup of sherry
- Half a cup of liquid honey
- A teaspoon of cooking or olive oil
- Sprinkle of allspice (optional)
Method
- Lightly fry the chicken in oil until golden brown, skin on or off, depending on your preference, then place in a baking dish
- Mix the sherry and honey together and warm for a few seconds in the microwave until its at a pouring consistency
- Drizzle over browned chicken
- Cover with alfoil or a lid for half the cooking time
- Remove cover and allow it to crisp a little on top
