Fresh fruit was often hard to get, so many country women like Rosemary learned to make the best of their pantry. That often meant using tinned fruit to its best advantage. And dessert was an important part of the farming food culture. After a long day at work, we all looked forward to whatever sweet dish would follow dinner. This particular recipe was a winter staple.

Ingredients
- 2 x cans of pitted plums (well drained)
- 3 x eggs
- 1 x cup of castor sugar
- 1 x cup SR flour, sifted
- 1 x tablespoon hot milk
Method
- Pre-heat oven to 180 degrees
- Grease baking pan
- Place drained plums in the pan
- Whisk eggs and sugar until creamy
- Fold flour into the hot milk
- Combine and pour over fruit in pan
- Bake for 25 – 30 mins until raised and golden
