Rosemary had a love for cake, which she handed on to her children. It grew from the important routine of morning and afternoon teas, which broke up the long days of manual labour on the farm.
In her early married life, she used a boiler and an old wringer to do the washing. She often mentioned how exhasting it was trying to wash sheets and towels by hand, especially when the shearers were staying. The purchase of their first electric washing machine, changed her life forever.
Always on the look out for an easy baking recipe, she kept this one because it made a dense, satisfying cake.

Ingredients
- 1 x 400 ml can of apricot nectar
- 1 x 375 pack of dried mixed fruit
- 2 x cups of self raising flour
Method
- Put nectar and fruit in a covered mixing bowl and soak overnight
- Heat oven to 180 degrees celsius
- Sift 2 x cups of SR flour
- Mix well with fruit
- Place in a well greased pan. The mixture will be quite stiff.
- Bake for 1 hour
Preparation Time: Overnight plus 10 mins
Cooking Time: 1 hour
