Tea (No Eggs – No Butter) Loaf

Rosemary loved a good tea cake to feed her hungry family. Her cinnamon tea cakes were always super delicious.

This one is an “eat-the-same-day” recipe, and is handy for people who can’t eat eggs. She neglected to put the cooking time on the recipe, so you will have to judge for yourself. I’m guessing 20-30 mins. You can cook in either a round or a loaf tin.

Ingredients:

  • 1 x cup of All Bran
  • 1 x milk
  • 1/2 cup of soft brown sugar
  • 1 x cup SR flour
  • Pinch salt
  • Half cup of sultanas, or raisins, or chopped nuts – optional

Method:

  • Soak All Bran in milk for at least an hour. If in a hurry, soak in HOT milk for half an hour.
  • Then add remaining ingredients. Don’t over mix.
  • Cook in moderate oven.
  • Must be eaten the same day because it doesn’t keep well.
