French Onion Meatloaf

Meatloaf is a great winter meal to serve with mashed potato. It backs up well cold, and sometimes Rosemary would put it in sandwiches for us the next day. It’s one of the first recipes she taught me to cook.

The very first lesson she gave me was how to make a piping hot cup of tea with proper tea leaves. She wrote the instructions out on a piece of paper and stuck them on the wall near the kettle. I always had to warm the cup first with hot water.

Ingredients:

  • 1 x kilo of beef mince
  • 1 x packet of french Onion Soup
  • Two thirds of a cup of tomato sauce
  • One third of a cup of water
  • 2 x eggs
  • 1 and a half ups of fresh bread crumbs

Method:

  • Combine ingredients and mix well
  • Shape into loaf on greased baking tray
  • Bake in a moderate oven for 1 hour or until cooked
